Ingredients

  • 250g cooked or canned salmon
  • 2 tbsp oat flour or almond flour
  • 2 tbsp Greek yogurt
  • 2 spring onions, sliced
  • 1 tbsp chopped dill
  • 1 tsp Dijon mustard
  • Lemon zest
  • Olive oil
  • Extra yogurt for serving

Method

  1. Mix salmon with flour, yogurt, spring onions, dill, mustard and lemon zest.
  2. Shape into small patties and brush lightly with olive oil.
  3. Bake at 200°C for 12-15 minutes until set and lightly golden.
  4. Serve warm or cold with extra yogurt and dill.
