Ingredients
- 1 tbsp olive oil
- 1 leek, finely sliced
- 2 garlic cloves, sliced

- 4 tbsp Greek yogurt
- A handful of dill and parsley
- Lemon zest and black pepper
Method
- Soften leek and garlic in olive oil with cumin and chilli flakes.
- Add beans and a splash of water, then fold in spinach until wilted.
- Season well and spoon onto a warm platter.
