Ingredients

  • 1 tbsp olive oil
  • 1 leek, finely sliced
  • 2 garlic cloves, sliced
  • 1 tin cannellini beans, drained
  • 3 large handfuls spinach
  • 1 tsp ground cumin
  • ½ tsp chilli flakes
  • 4 tbsp Greek yogurt
  • A handful of dill and parsley
  • Lemon zest and black pepper

Method

  1. Soften leek and garlic in olive oil with cumin and chilli flakes.
  2. Add beans and a splash of water, then fold in spinach until wilted.
  3. Season well and spoon onto a warm platter.
  4. Top with yogurt, herbs, lemon zest and black pepper before serving.
